Yes, you can disable them based on character by character using the correct glyph.
In the following example, the black triangle on the right is displayed as emoji, since no options are specified.

However, if you specify the correct glyph for the variant, you will get text.

Generally speaking, ︎ gets the text version and ️ or else doesnβt ask you the emoji version.
