However, in iOS 7, this method causes a portion of the text to appear above the top of the page. You can manually scroll up to view it in some cases, but it still looks very unprofessional.

The current version of the Apple iBooks app correctly displays the Acknowledgment setting, so there should be a way in iOS 7 to do it right.

Before iOS 7, you can set the license as the group name. Replacing "Title" with "FooterText", the problem in iOS 7 can be solved:

"Type" - String - "PSGroupSpecifier"
"FooterText" - String - Your license
