Is there any Mac application, web application, or others like JSFiddle for Objective-C / Cocoa purposes?

This is not exactly the same, but look at F-Script: http://www.fscript.org/

It allows you to quickly prototype and experiment. You can also easily connect it to existing applications. For some types of user interface debugging, I was invaluable.

I also found CodeRunner to be very convenient for creating application templates and for launching a single click to check language fragments. Available at the AppStore for the price.
