Can I change the price of an item in a store after posting on Google Play? (I assume the app is also published).

All online documentation at http://developer.android.com , as well as http://support.google.com/googleplay/, has nothing to do with it, just a mention of the possibility of changing the price of the application, and not in the application.

You do not change prices on the developer's console in the application, of course, if you have graphics / text in the application showing prices that you need to figure out, how to update them, maybe pull them from the server? See: Invoicing Catalog and Billing Testing

Yes, you can change the prices of managed and unmanaged products in the application, but NOT for subscription. This is due to the fact that users will always see the latest price of products as they buy, so the change in price for a managed / unmanaged product is wonderful. However, customers who have already purchased a subscription and agree with a certain price per month (or per year) cannot pay for another price without knowing it.
