Wiki functionality is just a Sharepoint feature. Adding folders is not available by default in SP Wikisite. For a workaround, read http://sharepointpratik.wordpress.com/2011/04/06/create-folder-in-wiki-page-library/

For some versions of SharePoint, you can also provide hierarchy management permissions for the user and / or group, then you can use the "/" in your link, and SharePoint will automatically create a folder for you.
