Any tutorial / good documentation on how to use the Gaussians to Mixture conversion implementation?

I found OpenCV code that uses the CvGaussBGStatModelParams structure, cvCreateGaussianBGModel and other related functions. However, I could not find any explanation of how they work and how to use them, and what they mean.

Any help would be appreciated.

These functions are undocumented (at least compared to manual ). However, if you look around at the source, you will find them at src/cvaux/cvbgfg_gaussmix.cpp. There:
