IOS hardware encryption

I am reading this security file from Apple . See page 3 for information on the hardware level of encryption. Does anyone have more info on this? If I have my own applications on my iPad, does this mean that any data stored in these applications will be encrypted and protected? So if someone stole my iPad, could connect it to a computer or try to jailbreak or something else ... they could not get to this data?

On page 5, it is mentioned that developers can use the API to encrypt information for added security. Is it even necessary?

I am writing a special iPad application for ad-hoc distribution, in which there will be PDF files and video files in the application. PDF files and video files are confidential. If the iPad is stolen, I can’t get anyone to this data. Will it be safe enough with default encryption?

This is not an automatic process. You, as a developer, must protect all the files you save. You must also ensure that your application does not attempt to access protected files while the device is locked. For more information, see Working with protected files in the iOS programming guide.
