I would just like to learn how to create ("instance") a new NSWindow in a Mac OSX application using Objective-C code.

You looked at the "Creating Windows" section of the NSWindow class link - it tells you almost everything you need to know about window software.

In addition, there is quite a bit of sample code (see the “Related Code Sample” section at the top of the link above) if you follow the examples.
