The package identifier must uniquely identify your application. You do not change it after release, never, and then you can change other material (for example, display name).
All this is important with regard to mobile preparation and in-app purchase profiles: you associate an in-app purchase with your package ID. And you can create mobile software only for your package identifier (not for com.yourcompany. * Or fr.ecomposite. *).
