Rapid Prototyping Tool for Using REST API Results on the Web

I am interested in writing an HTML5 application that uses the REST API. I am wondering if there are any interesting tools that can help me prototype the user interface very quickly?

For example, is it easy to use REST api in jQuery? are there any other tools / libraires that facilitate this.
