Porting DirectX to OpenGL ES (iPhone)

I was asked to investigate porting 10-year-old Direct X games (v7-9) to OpenGL ES, originally for the iPhone

I have never been involved in such a game port before (and I will hire someone to do this), but I would like to understand this process.
