Where are the labels typed: sub: defined?

In particular, is there a way to add a shortcut like :nsub:to \[NotSubset]?

For the \[NotSubset]default alias ⋮!sub⋮. Of course, as mentioned in HPMark's answer, if you are unhappy with what you can either change InputAliasesfor the current laptop:

oldOpts = InputAliases /. Options[EvaluationNotebook[], InputAliases]
SetOptions[EvaluationNotebook[], InputAliases -> Append[oldOpts, "nsub" -> "\[NotSubset]"]]

Or perhaps the best approach is to use the optional inspector to add an alias to either the current laptop or global settings (it can be found in the "Editing options" section). The latter is cheating $UserBaseDirectory/FrontEnd/init.m.
