How do you read / write / update the metadata of m4u and mp3 files using cocoa / object c?

Are there specific library files available for OS / X that I mean, I just don't know where to start.

You might want to use QuickTime for this. There is some sample code that does this. However, this is not the best way to access metadata. The new QTKit Framework still requires you to return to the C-based API. There is another example from Apple that embeds metadata in the Objective-C method. This may be the best starting point for you.
