This is HTML encoded text. You can use HttpUtility.HtmlDecode to decode the text to its original form:

string decoded = HttpUtility.HtmlDecode(encodedString);

decoded must contain:

If it is a text object, for example, your "& eacute;", this should be fairly easy to figure out. "& Amp; eacute;" means "sharp percussion e", and "& agrave"; "with serious emphasis." Similarly, "& is an ampersand (which I had to manually insert so that this screen is correct.)
