Creating tables with the WP plugin

I'm starting to write wordpress plugins, and I found a situation where I need to create tables to continue. Can anyone point out a decent tutorial on modifying a Wordpress database?

Their usually excellent documentation seems to be missing from this thread.

In WP, most plugins do not create new tables, but use the "wp_options" table, even if the new table is "natural."
