The best language / database / web server for serving data on mobile devices?

I'm looking for information on what to use to create web services that will consume my mobile application. I have been programming in Microsoft stores for 15 years, but I would really like to expand my horizons. I am torn between using my Microsoft experience and collecting something new that all children are doing these days. If I am going to learn something new and use it in a production environment, I would like to receive information from coders, not marketing departments.

Web server: Apache for functions, Lighthttpd or one of its peers for speed. If your applications are simple enough and do not require HTTP, you can use a manual server or RMI or the like. There is no competition between IIS and Apache. the only thing that IIS is going to work with is integration with things like Sharepoint and ASP.NET.
