How to authenticate requests from iphone application to web service

I would like to make requests from the iphone application to the web service that I created. How can I verify that requests made in a web service come from my iphone application (or even any authorized source) and are not tampered with?

I looked through basic auth via HTTPS, but does it issue credentials to the application safely?

This question is not specific to iphone; I would like to know how to protect and authenticate requests in general.
