Creating an online store

Many online stores have common functions, such as payment processing, order tracking, recommendations, shopping cart, CMS, etc.

Are there common open / commercial structures or packages that developers use to create this site? Or are many of them building it from scratch?

Services like Shopify look easy to use, but I don’t want my site to look too straight from Can, and I’m worried that there may be a restriction on the configuration that I can do.

Can someone point me in the right direction as to which technologies are available? I am looking for a solution that is not restrictive and has great community support.

In the wild, there are many open source solutions.

If I were to create an electronic store, I would probably take a closer look at Satchmo. Now I am biased since I like python and postgresql. The system is based on Django, which has a very flexible template system. But of course you need to make a design.
