How can I change the default Excel output encoding?

I am working on a solution in which Excel data is exported to XML. I implemented a schema and all the data was exported correctly. One of the problems I have is that the solution that will receive the XML files expects ISO-8859-1 encoding, and Excel displays UTF-8 by default.

Is there any way to change this?

Oh, and I use the xml export function in Excel 2007.
