Flex TextField will not accept "ü" and other "German" characters

Question

I'm having problems automatically converting Flex (3.5) "ü" to "u". As soon as I insert a character, it is converted.

Is there something I need to enable in order to include these other character sets? I thought Flex supports UTF-8?
