Email format support: plain text or HTML?

I need to send scheduled notifications to support system event notifications (service window, alerts, etc.). I see that most of these letters that I receive from my suppliers are in text format.

I wonder if you should stick to the plain text format (with the restrictions attached) or provide HTML based on better visualization?

I know the limited rendering capabilities of HTML for different email clients, but I believe that not complex HTML with images will be fine.
