If you have no reason to replace the standard user interface elements, do not do this. Most likely, you will be mistaken, and your application will look completely inappropriate on the device.
However, if you want to test the layouts of your application interface, I recommend looking at Briefs , a new structure for prototyping iPhone applications. It allows you to specify a series of images and how you want to interact with them, and creates a working application from it. This is a very impressive infrastructure for iPhone UI developers.
