How do Windows portable applications work?

Portable applications can run from USB sticks and all, and thus are very convenient, but unfortunately they are slow (like a USB stick it is usually slower).

How exactly different than installing a regular application

I know that they do not create registries and that's it, but how do they achieve the same as other, “normal” applications ?
