Best way to record user activity in a database?

I am creating an application that performs user checks on certain days. I need to track how many times these checks are performed against this particular user.

My initial thought was simply to have a field in one of my tables, which I simply enlarge when performing checks. My other thought was to create a table called "AuditUser" that will insert a new record every time the client is verified.

It really is a question ... What is the best practice approach?

If anyone has a better solution, please suggest.

use the AuditUser table, you will have a record of each check (with date + time), which is better than just an account and the last date + time.
