I want to develop this game for iPhone. Which structure is best used (e.g. Cocoa, Cocoa2d, OPENGLES)?

I would look at

http://code.google.com/p/cocos2d-iphone/

You get a whole engine that helps with your application, and work with fairly complex jobs.

Cocos2d does the following.

  • Stage management (workflow)
  • Transitions between Sprites Scenes
  • and sprites. Effects: lens,
  • ripple, waves, fluid, swirl, etc.
  • Actions (Behavior): Trasformation
  • Actions: move, rotate, scale, transition,
  • etc .. Composed actions: Sequence,
  • , , :
  • Exp, Sin, Cubic .. :
  • CallFunc, OrbitCamera
  • 2d
  • Texture Atlas
  • Parallax
  • (Cocos Live) Touch/Accelerometer
  • "" ""
  • /
  • PowerVR (PVRTC)
  • format : objective-c
  • : open
  • OpenGL ES 1.1

I would go with OpenGLE. This will allow you to have 3D and do some interesting things later if you want.
