Can I create iPhone apps using Adobe Flex / AIR? Any guides, pointers?

No, I don’t think you can. Despite the fact that Flash support on the iPhone has long been known, it continues to not be implemented.

Edit: The mobile version of the flex framework was announced by Adobe the following year.
