Signature Retention Ethics

I am working on software that creates a contract and captures the client’s signature via gif and applies it to the contract (and produces a pdf file). Now we save the data from the contract, but when it comes to signing, I'm not sure if I should do this.

Save it: Pros: If the pdf document is lost, I can quickly and easily restore the document for those who need it (us or the client). (checked with lawyers, restoring a document from data is legal and applicable if the data is not changed or changed)

Cons: Although I will never do anything with a saved signature, I cannot be sure that if I ever leave the company, my colleagues or replacements will abide by this.

Do not store it: Pros: ethical high point, there is no one who could use this image now and in the future and do nothing with it. It keeps everyone honest.

Cons: Now there is no way to restore the original document if pdf is lost - which is a good opportunity.

Lawyers are the most important people you can talk to in this case. But I’ll still say that I didn’t keep it. If necessary, I suggest saving the contract in a format from which you CANNOT extract the original GIF. For example, take a png file for the entire document or another solution.
