Good books or online resources for learning Hibernate

Java Persistence with Hibernate is the second edition of Hibernate in Action. They changed the name as they now provide examples of JPA as well as Hibernate.

The high performance Java Persistence is also worth reading, as it explains which Hibernate features are efficient and what you should avoid.
