IP address changes automatically for the default website in IIS

I have a very strange problem with IIS on one of our servers. Sometimes it seems that the IP address has changed from (All Unassigned) to 127.0.0.1, which led to the failure of everything that our web service uses. Is IIS a configuration change? Has anyone had a similar experience? Many people have access to this server, therefore, despite the fact that they claim that they did not touch it, I suspect that this is human intervention, I just need a way to track it.
