Where is the most suitable source code for a Linux / Unix application?

As a developer, I often download and run

./configure
./make
./make install

to install applications on my Linux system. But I was never very clear in the best place to save the downloaded directory. My local Desktopis the default location, but I would like to know what is the best “official” place to save it. Also, does it depend on the distribution?

I am running Ubuntu now. I know that apt-get install can do this for you, but sometimes the application that interests me is simply not available on these lists.

@dirkgently and @dmckee are exactly the same. I would add that since this can be a moot point, I would imitate what the distribution provider (in your case) Ubuntu does for its core packages.
