XML parsing and testing framework

Question

Many of the products / services we interact with (including our own) use XML-over-HTTP or derivatives (for example, the IM / IM O presence protocol).

I am looking for a tool that will "listen" to traffic and create client / server stubs for simulation / testing.

This seems like a good idea for a project.

This is not a solution, but the first step should be at least support for the webservice descriptor descriptors.
