How can I specify the default timezone in Crafter?

Question

When using the Date / Time control, it may have a time zone selector. But, when it is not, it has a default time zone (in my case EST).

How does Crafter determine this default timezone? Configuration? from server settings?

And how can I change it?

As an administrator:

• Go to the preview page or dashboard for this site.
• Open the sidebar of the site content, select in the admin console v2.5 or Site Settings in v3.x
• Select the "Configuration" tool in the menu on the left, this will open a drop-down menu.
