Until you finish the world, if you commit GoogleService-Info.plist(similarly, on Android google-services.json), you better leave it for one big reason: you make it clear that other developers creating your code must create their own Firebase project to host its configuration and data ( because your project simply will not build with the absence of this file). In addition, if your project is writable in the world of resources in it, you can expect people who easily master your application and configuration to inadvertently start writing data to it, which is probably not what you want.
Open source projects that require installing Firebase should ideally indicate in readme that anyone who wants to work with this application should go through the Firebase configuration process.
