Why should I use and instead of &?

Question

Why should I use &instead &when writing HTML for my site?

Where can I find a list of other characters that I should encode? (bar / too, right?)

What problems can arise if I insert the character correctly as it is in html?

The fact is, I have several affiliate links, and I'm worried that if I write them in some cases and for some reason because of a specific browser or device ... that the information in the URL will not be transferred correctly.

Hope someone can clear my mind?
