Can 301 redirects be canceled? Will it be a punishment for my rating?

I am responsible for creating the website for the company that made the mess.

They own a domain xxx.it( xxxnot a real domain, just a placeholder).

A few years ago, they redirected 301 xxx.itto xxx.com(they just changed the TLD).

Last year, they redirected xxx.comto 301 yyy.com(so they actually changed domains).

Now, after 13 months, the company has failed, and the new management wants me to cancel everything and 301 redirected from yyy.comto xxx.it.

So:

  • 301 redirect is permanent. So, conceptually wrong to cancel it. What happens if I cancel it? Will my rating be punished even if a significant amount of time has passed (13 months)?
  • Will the scanners detect the loop (even if I remove the 301 redirects from xxx.itand theoretically break the loop)? Here is a potential loop: xxx.itxxx.comyyy.comxxx.it→ etc ...

All the articles that I found on the Internet are quite old and incomprehensible on this topic, so I ask this question.
