Can I control the screenshot displayed in the Android task switcher?

My application displays personal data, so I do not want to see the contents of the application in the task switcher.

You cannot control what it shows, but you can completely exclude it from the latest applications. In your manifest, add the following attribute to the activity tags for actions that should not be displayed in recent applications:

android:excludeFromRecents="true"
