Does anyone know any software (for win7 or winXP) that will allow me to capture or simply view the data transferred between the Firewire device and Application.
I want to see data streams between my (ASIO) audio interface, which runs on FireWire and my recording / mixing software.

Yes, you need a FireWire bus protocol analyzer. Take a look at ebay for the CATC (Lecroy) FireInspector. There are several recently listed, some at reasonable prices, some not.
