In xcode 4.2 and above, we can find both devices to display the retina and display non-retina. this means "resolution of 960 by 640 pixels at 326 ppi" and "resolution of 480 by 320 pixels" by 163 ppi as an iOS simulator.
(in the menu bar of iOS Simulator, Hardware > Device > iPad/iPhone/iPhone(Retina) ).

How can I choose a device from Simulator for the new iPhone 5 (resolution 1136 by 640 pixels at 326 ppi).?

Both Richard and NSPostWhenIdle are true. You need to upgrade to Xcode 4.5 GM, after which you will see the option "iPhone (Retina 4-inch)", which is the display of the iPhone 5.
