Is there a version of Bouncy Castle that will be used when developing iOS applications?

No, in 90% of cases, encryption passes through Apple’s own CommonCrypto library. Fortunately, there are some very easy to use wrappers for CommonCrypto, see Rob Napir's RNCryptor.
