Real-time fluid simulation methods

What methods are used to simulate fluids in real time, such as water, for example, in video games?

In particular, I am looking for a design idea for a (unfortunately rather short) physics project in Uni, so the simpler the better (if there is any such thing as “simple” in liquid simulation ...)

AFAIK the most popular real-time fluid simulation method is the SPH method:

It is implemented in Bullet, PhysX and Fluids :

Fluids v.3 is a large-scale open-source fluid simulator for CPUs and GPUs using smooth particle hydrodynamics. Liquids can effectively simulate up to 8 million particles on a GPU (for 1500 MB of RAM).
