How to convert .apk files to .dex files?

Why do you need a dex file? Its a bytecode file for dalvik VM.
The APK is actually a ZIP file. Therefore, you can unzip it with:
unzip app.apk
The DEX file is located in the unzipped folder.
From your question, I think you're done now. Decompiling a DEX file is another story.
