And besides XML storage and support for Cocoa Bindings, Core Data (exactly?) Is the same on Mac OS X and iOS.

it’s not free, but there are several chapters on basic data in the book “More iPhone 3 Development for iPhone SDK”. I know this is not for the iPhone, but he got a lot of what you need to know. also the "Cocoa Programming Guide" is pretty good.
