I can not understand what is the difference between these two programs. In particular, I am interested in starting a virtual server in the background as a daemon (Linux OS)

VMware server runs as an application on a regular Windows or Linux OS. ESXi installs its own hypervisor as the base OS.

If you ask about this, then you should probably start with VMware Server.

from the VMware website, a server is a hosted application, that is, it runs inside the host operating system. ESX runs on baremetal.

Like these guys. ESXi is free though. Not expensive as stated previously.
