VMware server runs as an application on a regular Windows or Linux OS. ESXi installs its own hypervisor as the base OS.
If you ask about this, then you should probably start with VMware Server.
from the VMware website, a server is a hosted application, that is, it runs inside the host operating system. ESX runs on baremetal.
