If you just need to know this for 3D graphics development purposes, you may need to look at something like gDEBugger or, if you only care about NVIDIA cards, you can try NVIDIA PerfHUD . I did not use them myself, but I would expect them to track such information.

NVIDIA PerfKit has a linux version that allows real-time control of various video card properties, including the use of graphics card memory. Obviously, this only works for NVIDIA graphics cards, and also requires the use of a special instrumental driver.
