Yes, motion events from the Siri Remote accelerometer can be used with a simulator. But: You need a Mac with Bluetooth Low Energy support to be able to pair the remote. All systems designated as compatible with Bluetooth 4 work. Older systems can be upgraded to work by acquiring a compatible Bluetooth dongle, but this is probably beyond the scope of this question ...
