What is a good mail server for development?

I am doing some development that will include a response to emails, and I would like to use an IMAP mail server for this.

I am currently using the Devnull SMTP server to test the sending of emails, but it just logs and discards messages, it does not perform IMAP to check incoming emails / mailboxes.

I don't need / need a full-blown server, just something lightweight, I can easily start / stop as needed.

A multi-platform platform is recommended, but feel free to respond to specific platforms as well.

(The POP3 server will also be acceptable for development purposes, as in any case I will support both in my code.)

I am considering JAMES the best mail server for development. And its portable too. Completely written in Java.

Mercury Mail Server is a full-featured mail server (minus webmail), but it is very lightweight and should meet your needs: Mercury Mail Server

Edit: Forgot to mention only Windows / Netware

Check courier for unix based machines. I ran it for a while on a Linux machine, and it is very nice. You can easily enable / disable the necessary functions, including the protocols SMTP, POP, IMAP, SMTP Auth, SSL, etc.

Exim works fine even in windows via cygwin.

Mdaemon is an excellent MTA window. There are many good reasons to use it in production too. Another option is to use the Gammadyne email program in server mode.
