I have the same problem too, and I was able to edit this field in past applications. I called Apple support, and they said the problem is this; that when Game Center is turned on for BundleID, it becomes unavailable for editing. We even tried to disable Game Center, but to no avail. They told me that the options were to use the BundleID change in Xcode to match the BundleID in iTunesConnect or change the name of my game in iTunesConnect (to free this name), and then create a new application / game in iTunesConnect with the news released the name and now the correct BundleID.
It should be noted that if you change the name to free it and create a new application / game, you will not be able to remove the old game / application from iTunesConnect. He just sits there in limbo.
They said that there is no way to edit this field after it has been marked, not being edited.
This does not answer the question of how to change it, but it can make people stop spending hours trying to change their BundleID.
