Is it possible to simulate a percentage variable using logistic regression?

I have a variable ( V ) corresponding to the percentage of cells (human B cells) that I want to explain using 3 variables ( X , Y , Z ) corresponding to the absence / presence of 3 different procedures. Can I use logistic regression as

 glm(V~X*Y*Z, family=binomial(link="logit"),data) 

?

My variable V for explanation is not stochastic, but is between 0 and 1
